Update the Email Sender of the automatically sent emails when creating New Tasks #inSalesforce

Under Activity Settings | Disable this setting: Enable User Control over Task Assignment Notification

Once disabled, users will not receive email when a task is assigned.

You can set up new task notifications that could come from a different email address.
