Add a new Subject picklist value to Task OR new Subject picklist value not reflecting in Lightning
It's a known issue in lightning and takes time to reflect.
Resolution:
Switch to the Classic version and you will find the new value you just added. Create and Save the task record with this new value in Classic Version then switch back to Lightning.
